Devon Apple Cake - Award Winning Recipe

This is a regular autumnal warmer in our house that is dead simple to make and uses up at least one or two of your surplus cooking apples at this time of year.  I won second prize with this cake in the local Village Show in early September.  Yes, I forgot to take a picture of it when it was whole - too eager to eat it.  It's a basic sponge cake and then has a lovely crumbly sugar and cinnamon topping.

Ingredients:

225g cooking apples (peeled, cored and chopped any size)
juice of half a lemon
225g plain flour
7.5ml baking powder
115g butter
165g sugar - I've used caster, soft light or dark brown - all good
1 beaten egg
30-45ml milk
2.5ml ground cinnamon

1 - Preheat oven to 180 degrees Celsius.  Grease and line an 18cm round cake tin. **

2 - Toss the apple with the lemon juice and set aside.  Sift flour and baking powder then rub in butter until it resembles breadcrumbs (I throw this in the food processor)

3 -  Stir in 115g of the brown sugar (keeping 50g aside), the apple and egg and mix well adding enough milk to form a soft dropping consistency.

4 - Transfer batter to tin.  Mix the remaining 50g sugar with cinnamon - sprinkle this over the cake mixture.  Bake for 45- 50 mins until golden.  Leave to cool for 10 mins in the tin before transferring to wire rack and your mouth.

thing really annoys me too, like you said would you want stale??
We've got loads of apples at the moment, there's a couple of trees in the car park and we're frantically picking before one inevitably falls on a an elderly customers head! If Id seen this recipe yesterday would certainly have tried it as we had 50 walkers yesterday for coffee and cakes in the afternoon.So yesterday was a real cake baking day.
Agree Lakeland are great for baking stuff we use them too for all sorts of things.
BTW congrats on the prize!

Well done on your show prize. Looks a lovely cake. Think I did apple and chocolate cake to death last year - making three different ones, but perhaps I should have a go at adapting this one!

Unlikely we shall make it as have done enough gadding about in the car to foodie things recently - need to spend some time at home. But hope it goes well and you make some useful contacts - selling programmes seems like a good way to do it.

Hi Kate,
Had a shedload of apples sitting around at the weekend so decided to give your recipe a go and it was delicious! We had it warm with with some cream and it was like tasting a slice of autumn. Will definitely make it again, thank you!

Another apple cake recipe I've used before is this one from Rachel Allen: http://uktv.co.uk/food/recipe/aid/607041 Very similar to yours except you place the apple on top of the batter before putting it in the oven. Loved the crumbly crust on the top of your version, though!

Tried it over the weekend. Absolutely delicious! Works well warm as a pud or cold as a cake and really easy to make. My 8 year old helped me make it. Thoroughly recommend making it.

I just wanted to ask if the oven temperature is for a standard oven? If so, I'm guessing for a fan assisted oven, it would be 160? Thanks in advance.
